Seared Sesame Encrusted Ahi Tuna Steak Recipe

The following recipe is not only healthy but it is one of the most delicious dinners I have every prepared. If you are a seafood l over, then you have to give this a go...

Tuna is truly an amazing food with a number of benefits that contribute to a healthy lifestyle. Tuna is rich in Omega-3 polyunsaturated fatty acids and has been known to reduce the risk of heart disease. It is also low in fat and cholesterol making it a great alternative to beef. Not only is tuna a powerhouse of nutrition, it is also one of the most delicious sources of lean protein that you will ever sink your teeth into.

Tuna is also easy to cook. Its a hardy fish and holds together well on the grill, in the oven, or on the stove top. The following recipe is one of my favorites and is fairly easy to prepare.

I made this particular dish the other day and it was absolutely wonderful. My wife, who normally does not eat big portions, cleaned off her plate and wanted more, so that is a very good sign.

The thickness of the tuna steak you use really depends on how rare you like your tuna. Because you are only searing the outside of your tuna steak, it will not be in the pan for very long. So the thicker the steak, the more rare the center will be.

I personally do not like my tuna too rare, so I usually make this recipe with thinner cuts of tuna. This is just a preference, not a requirement. Many people, including chefs say the only way to eat tuna is rare. I guess you will have to be the judge.

Let us move on to the recipe shall we?

Seared Sesame Encrusted Ahi Tuna with a Cilantro, Garlic and Lime sauce..

I should mention one thing before we begin this recipe. I do not follow exact measurements in recipes. I measure everything by eye, so the following measurements are only to be used as a guide. So don't get too mad at me!

This is optional, but I like to toast the sesame seeds in a dry pan first before I put them on the tuna. The seeds become nutty and aromatic when you toast them. This is highly recommended if you have the time and is quite easy to do. Simply heat a dry pan over medium heat, then add the seeds shaking the pan occasionally. You may have to do this in batches, depending on how many seeds you are toasting. You do not want to overcrowd the pan. Keep an eye on the seeds and make sure they do not burn. Toast them until they darken a bit and start to become fragrant. Remove and let them cool before adding them to the tuna.

INGREDIENTS:

1/4 Cup Black Sesame Seeds 1/4 Cup White Sesame Seeds 1 Tablespoon of Sesame Oil 2 - 6 ounce Ahi (Also known as Yellow Fin) Tuna Steaks Salt and Pepper to Taste

MARINADE/ DIPPING SAUCE

1/ 2 Cup of Low Sodium Soy Sauce (Who needs the extra sodium, right?) 1 Lime (Juice and Zest - If you want more lime flavor, add another) 1- 2 Cloves of Garlic Minced 2 Tablespoons of Honey 1 Tablespoon of Sesame Oil 2 Tablespoons of Freshly Chopped Cilantro Leaves

1) Prepare the marinade. Add all marinade ingredients to a small bowl and mix well. Reserve half of this marinade in a separate container to use as a dipping sauce.

2) Get a glass baking dish or other non-reactive container to marinade the tuna in. You want the tuna steaks to fit snuggly in the dish so that they are surrounded nicely with the marinade. Pour the marinade into the dish and put the tuna steaks in and kind of swirl the marinade around so that you coat the fish well. Cover with some plastic wrap and refrigerate. Another option is to pour the marinade in a large zip lock bag, add the tuna, and then squeeze out the air. Marinade for 30 minutes to an hour, turning the tuna about half way through.

3) Remove tuna from fridge and let stand at room temperature for about 20 minutes or so.

4) Remove tuna from marinade, shaking off any excess marinade and dry on paper towels.

5) Heat a saute pan over medium heat and add 1 tablespoon of sesame oil. The oil should be hot but not smoking.

6) While the pan is heating, arrange your sesame seeds on a flat dish. Roll the tuna around in the seeds pressing down as you roll ensuring the seeds are packed into the tuna nicely.

7) Add the tuna to the hot saute pan and shake it a bit to make sure the tuna does not stick. Sear for 30 to 40 seconds on both sides.

8) Remove and serve with the reserved dipping sauce.

For side dishes with this recipe I usually keep things pretty bland as I don't want anything to compete with the flavors in the tuna. So I usually prepare a side of steamed green beans with a bit of butter, salt and pepper or other vegetable along with some lightly seasoned jasmine or basmati rice.

Spanish Food - The Perfect Paella

Looking for a traditional Spanish recipe? Without doubt, the best-known is going to be the prodigious paella ... that tasty, adaptable, gregarious dish famed throughout Spain and the World.

And, what an impressive choice of recipes exist for a pleasurable paella: seafood, chicken, rabbit ... or a mixture of all three! Perhaps you are non-meat eating ... well, just opt for one of the several vegetarian paella recipes. Bit of a health fanatic? Then substitute white rice for whole-grain rice or wild rice.

Got a large family and not much money to feed them on? Use plenty of rice and imagination along with a tasty stock, plus whatever you can find in the cupboard! I have certainly enjoyed many paellas where there have been more bones/shells than meat/ seafood! And, very tasty they have been too, the richness of the company more than compensating for any paucity in the ingrediants.

So ... how do you go about making the perfect paella? First of all, you need to choose your rice. The short-grained rice from Valencia - where most Spanish rice originates - is fine for making paellas. However, the "bomba" rice grown in the neighboring region of Murcia, is the "king" of paella rice: again, short-grained, it has the ability to absorb the stock whilst remaining firm.

Another "must" is to use saffron ("azafrán") to create the gentle, yellow color for which this delectable dish is renowned. Yes, it is possible to buy cheaper, artificial colorings but ... go for the traditional - it will bestow a wonderful aroma and unique flavor.

Many Spaniards swear a perfect paella can only be achieved when using a tasty, home-made stock. Whatever you decide, allow at least double the amount of liquid to rice. If, during cooking, the dish becomes a little dry, just add a dash more water or stock.

Another tip I have been told, on more than one occasion, is to gently fry the rice for a few minutes before adding the stock, ensuring that it is well-coated in oil. I think all Spaniards would agree that, once cooked, it is best to leave your paella to stand for a good five minutes before serving.

Perhaps the most important ingrediant for making that perfect paella, is to use lashings and lashings of love whilst preparing it - for surely, that is something we can all afford - and to enjoy to the full the marvellous company of those who will share it with you.

I shall now have to choose a paella recipe to offer you as an example! I think I will opt for a seafood paella, typical of the region of Valencia, where I live. The ingrediants are for a hearty four servings. If you are not a hefty eater, or on a diet, then reduce the amount of rice/stock slightly.

Paella Valenciana - Paella From Valencia

Ingrediants:

  • 4 cups rice.
  • 8 cups fish stock.
  • 8 king-sized prawns/langoustines.
  • 8 mussels.
  • 200 gr shrimps.
  • 200 gr peas (fresh or frozen).
  • 2 tomatoes, skinned and chopped.
  • 2 cloves garlic, thinly sliced.
  • 3 strands saffron, crumbled.
  • Olive oil for frying.

Method:

  1. Sauté garlic in a paella-type pan.
  2. Add tomatoes, peas, shrimps and saffron.
  3. Cook for a few minutes.
  4. Add rice and stock.
  5. Simmer for approximately 20 minutes.
  6. Decorate with prawns and mussels.
  7. Cover paella with a lid.
  8. Poach the seafood for a few minutes.
  9. Decorate paella with lemon quarters.
  10. Enjoy!

The best way to break down the mistakes that are done when buying seafood is to look at each type of seafood and the characteristics it should have when you purchase it. You should buy high quality seafood whether it is fresh or frozen and these tips on what to look for to keep you from making the top 10 mistakes when buying seafood.

When you go to buy fresh whole fish do not buy it if the appearance of the fish is not bright and shiny, scales are not intact and adhere to the skin. If the eyes have turned pink, cloudy and sunken, except with small eyes fish like salmon. Gills should not have any type of slime coating or be green or brown in color. Fish should not have a fishy odor.

When you buy fresh whole fish it should be bright, shiny, and most of the scales should be intact and adhere tightly to the skin. Every fish has markings and colors that will fade and be less pronounced as the fish loses its freshness. The eyes should be bright, clear, and full and sometimes protrude according to the species. The color of the gills fade over time, turning from bright red to pink, grey and then to a green or brown color so the brighter red the more fresh. Fish that is fresh will have practically no odor at all, the fishy smell happens over time.

When buying fresh fish filets and steaks do not purchasing if the fishy odor is strong, there are signs of browning or drying around the edges of the filets, if plastic wrapping is not tight, it if there is plenty of space between the fish and the wrapping, and if there is any liquid in the packaging.

Fresh fish filets and steaks odor should be fresh and mild. The flesh should be moist, firm, and elastic and have a fresh cut appearance.

When you buy frozen seafood do not buy if it is not frozen solid, if there is any discoloration or any type of drying which can mean freezer burn, if there is an odor. Do not buy any frozen seafood product that has ice crystals or water stains.

Frozen seafood should only be purchased if it is frozen solid and if there is no discoloration and if there is an odor it should be fresh and mild. The wrapping should be moist and vapor proof and should fit around your seafood closely and not damaged in any form. If you notice water stains or ice crystals, the seafood has thawed and been re-frozen. Always look for an expiration date.

When you are purchasing any seafood product fresher is always better. When you buy frozen talk with the person that is in charge of the seafood and learn how the seafood was frozen. If it was “flash frozen” it may in fact be better than fresh. The time it takes to get quality fresh seafood to your store will give the seafood time to age. Flash frozen is when the seafood is frozen within just a few hours of harvesting to ensure the quality that you can buy.

10 Tips For Grilling Perfect Seafood

Grilled seafood can be a delightful culinary experience if done right. Many people shy away from seafood because they don’t know what to do with it. Seafood makes a tasty, healthy meal on the grill. Did you know most fish has less than half the fat of beef? I would rather put a nice salmon fillet on the grill any day. Grilling great seafood does takes a little practice. I’ve put together 10 tips to help you get started.

1. Always start with fresh fish if possible. You will have a better grilling experience. Previously frozen fish will also work; its just harder to work with. Plan on 6-8 ounces per person for fillets and 8-12 ounces per person when buying whole fish.

2. When grilling directly on the grill it is best to use a firm fleshed fish like grouper, marlin, salmon or tuna. A special fish and vegetable grid will make grilling easier. The finer mesh will help keep your food from falling through. You may even want to use a wire grill basket, especially for those more delicate fillets. This way you can turn your fish over without worrying about it breaking apart. You can even stick lemon slices between the fish and basket, if you wish.

3. Always make sure your grill is clean and well-lubricated with oil to prevent your fish from sticking. Fish breaks apart easily. If it sticks to your grill, you will have nothing but little pieces to serve. I like to saturate a paper towel with cooking oil and wipe down my grill before putting my food on. I haven’t tried it yet, but PAM also has a cooking spray made just for grilling.

4. If your fish came with the skin on, leave it on. Always place your fish fillet flesh side down first. This will sear the flesh, locking in the flavor and moisture. Turn over one-third to halfway through the grilling.

5. Always grill your fish over a hot to medium-hot fire. To test this, hold your hand about 5 inches above your heat source. Your fire is hot if you can only hold it there foe about 2 seconds. 3-4 seconds would indicate a medium-hot fire. When cooking whole fish instead of fillets, you will want a slightly lower temperature as the cooking time will be longer.

6. So how long do I leave my fish on the grill? A good rule of thumb is about 10 minutes for every inch of thickness. There are a few exceptions to this rule, but your recipe should note this if that is the case. Fish is done when its color turns opaque and just begins to flake with a fork. A little underdone is better than overdone as your fish will continue to cook after taken off the grill.

7. Marinades are great to add additional flavor to fish. Marinade your fish for only 30-60 minutes before grilling. Because of their lack of connective tissue, fish absorbs marinades easily. Do not over marinade or the flavors may overpower the flavor of your fish.

8. Do I need to baste my fish? When grilling, baste lean fish periodically with your favorite basting liquid or olive oil. This will help keep the fish from drying out. Basting is not really necessary with fattier fish but you may wish to do so for more flavor.

9. I love to grill with skewers. Lightly marinated shrimp are great! Use fairly large shrimp for this. Chunks of fish also work well as long as they are firm fleshed. Alternate with chunks of your favorite vegetables for great kebobs. If using wooden skewers, be sure to soak them in water for at least 30 minutes. This will keep them from burning up on your grill.

10. One last tip. Tired of your hands smelling like a tacklebox long after you’ve washed your hands? Try rubbing some lemon juice on your hands. Then wash with soap and water. This will also help get rid of onion or garlic odors.

Grilling seafood isn’t really very hard if you follow these tips. With a little practice you will be grilling perfect seafood in no time. Your stomach will thank you for it, as well as all your friends and family. So slap a nice fillet of salmon on the grill today.

Octopus “a la mugardesa” - a Seafood Dish from Galicia

A huge octopus, a giant squid. Guaranteed to put the fear of god into most deep sea travellers and fishermen (and those of us who aren’t also), but funnily enough they are also quite a delicacy when prepared properly and that is the purpose of this article about a dish from North Western Spain or more specifically Galicia.

It is usually possible whenever you stopped to research information about different countries cultures queasiness and general background for you to come off with a common theme or a common name that would relate to that country's cuisine. Such as English food, German food but when you consider Spanish food or if you wish to be a bit more accurate about how you look at it, food and recipes that originate from Spain there is a very convincing argument that would say it's not that simple.

The argument and the line of logic that would be followed and support this particular viewpoint would be that Spain is a much more recent combination of the various autonomous regions that lie within the country. The various autonomous regions that comprise Spain have been slowly pulled together through a variety of different processes some by force, some by choice but they all have one thing in common and that is they have kept their own individual features.

There are 17 different autonomous regions that come together to form modern-day Spain and the majority of these regions have their own cultures that is the majority of them have their own linguistic variations and in some cases different languages and they certainly have their own individual cuisines.

One such extremely distinctive autonomous region is Galicia which is Spain's most north-western province. Spain's most westerly autonomous region it is surrounded on two sides by the Atlantic Ocean and as you can imagine for a region that has so much rugged coastline a lot of Galician cuisine is very much based on seafood and seafood based recipes.

That having said not all of Galician cuisine is all seafood based and the region can lay claim to some quite gorgeous recipes and provincial dishes and are all well worth trying out.

Lets top talking about the food and get down to business. Let’s eat!

The key thing to remember when you are cooking octopus is that you have to get your preparation right. In this instance we are going to cook the Octopus with enough for four people so ingredient wise we will need the following:

2 kg of octopus pieces
4 potatoes
1 green pepper
1 large onion
2 or 3 peeled tomatoes
Coarse salt
½ a teaspoon of hot paprika
3 cloves of garlic.

To prepare this dish the first thing you need to do is put 2 litres of water into a pan and when it begins to boil, put the octopus into it briefly three times. That way it will be more tender and the suckers on the tentacles will not be lost. Then you must let the octopus cook, over a strong heat for about 40 minutes. After this you should put the water to one side so that you can use it to make the sauce..

Next take the potatoes and peel and chop them and partly cook them in the reserved water and then add salt to them. Next you must finely chop the onion and add it to a frying pan with oil. When the onion is fairly well done add the chopped pepper and tomato. After 15 minutes add two or three large spoonfuls of octopus cooking water and mix. Take the potatoes and put them in a deep serving dish and add the octopus in the centre. And some salt immediately to taste. Lightly fried garlic and separately makes the sweet and hot paprika. When the garlic is brown at the launch spoonful of cooking water and then the paprika mixture. Optionally you can use with a little vinegar.
